i have been “veganesque” for many years. what that means is that i eat a vegan or plant-based diet most but not all of the time. in my case i eat vegan to feel better– that it protects animals or the environment is an added bonus. it’s been a struggle to learn how to cook vegan food. when i see a recipe that starts with “three days before you serve your meal, soak your beans,” i rule it out immediately. but i also don’t want to exist solely at the other end of the spectrum buying resource intensive heavily engineered products that you just heat up at home. that is part of what i do, but it’s expensive both financially and environmentally.
mastering grilled tofu steaks upped my vegan game by giving me an “as good as bacon” out of the pan tofu—omg (see “the big tofu” in skinny dish! cooking with trader joe’s–normally i wouldn’t send you to amazon but only $9.99 on kindle (where you can’t hurt delivery people) and well worth it–i have had serious meat eaters, teens, vegan skeptics extraordinaire ask me for this recipe and become slightly addicted to it, its that good. “the big tofu” is so easy and yummy that i just do up a couple of packs a week and throw those “steaks” into everything.
